A great blend and roaster is where we start with tiger, tiger coffee. It is a given that you have experience and passion on the machine. Fiori Coffee is our choice. The Fiori blend is 100% Arabica and is a blend of 8 different coffees. Most of the coffees are roasted separately to accentuate the individual characteristics and smoothness with a few of the beans roasted together for the more velvety mouthfeel that combined roasting gives. The flavour profile of this blend is described as very smooth caramel all the way through with a concentrated punch of flavour and a medium to full body. Note persistent and complex aromatics of caramelized sugars, toasted nuts and cocoa balanced by a bright fruitiness and spice Our coffee is delivered fresh, twice per week. Understand that we are dealing with a 'live' product. The beans may vary from crop to crop, sometimes even bag to bag. Apples from season to season vary in flavour, size, yield and the same goes for coffee. This means that giving you the customer a consistent product is harder than you might think. It might also explain why cafes with ‘less' experience and not so great a blend can produce some really ordinary coffee. After coffee is roasted, it continues to change. Clare and Jackson are currently refining this area in-store so that more than ever we can give you a great cup every time. equipmentThe last few years in ‘coffee land' has seen some incredible technological advances. Our toe has dipped as far into that realm as using a BNZ grinder with conical burrs. Wow, compared to the old days, it feels like you just don't have to think about your grinder at all! The Wega coffee machine we use is technically ‘old' technology. After a year of using it, it's still rock solid. We are currently looking into ‘hot-rodding' it, which we think will be much fun. There are a few other machines on the market that would be good to buy, but it feels better to wait awhile and let any problems get ironed out. In saying all this the Wega does a great job and we pull some great shots from her! The grinder and the machine are a great pairing. As far as hand tampers go we have a few!! They are addictive and as far colours go Clare has to restrain herself as to what colours not to buy. She has recently fallen in love with a tamper made in Australia and designed by a barista in Sydney from Coffee Lab. It actually gives in your hand when you push down and has given great relief to very sore hands. It has metal rings in the design so that you can adjust the height. Jackson is a Reg Barber Radical Pro fan as he feels it works in his large hands. The Reg Barber tall aluminium handles are great if you have small hands, which neither of us have. The milk jug situation is getting funny in that what do you do with all the ones you don't like?? We use the professional set from Coffeeparts which Clare really likes. Jackson is on the search for the Holy Grail of Milk Jugs. We know about a prototype in the making and look forward to buying that one too!
